These roasties are a tasty alternative to regular roast potatoes. When you want something really special, they're great with Christmas turkey.
Preheat oven to 200C/400F/Gas 6. Quarter the potatoes lengthwise and place in cold salted water. Boil, then simmer 8 minutes.
Drain the potatoes and add turmeric, chilli flakes, salt, and pepper. Toss in a colander, then drizzle with olive oil and toss again
Put the remaining olive oil in a roasting tray and heat it in the oven. Add the potatoes to the oil and stir. 40–45 minutes, rotating once, until crisp and golden.
Serve on a hot plate after draining on paper towels.A fluffy exterior is important to crunchy roasties.
Let the potatoes simmer and dry before draining. Then shake the colander or pan to rough up the edges before adding oil.
